I adore salad and we eat it with most meals during the Spring and Summer months. Through persistence and over-exposure we have successfully managed to get the Little People to love this kind of salad, which pleases me greatly.
Our greens of choice are lambs lettuce or baby spinach :: the Little People happily eat these leaves, but still spit out lettuce/watercress/rocket (we need to keep at them with these). Add to the leaves some sweet cherry tomatoes, cucumber, red pepper, red onion and cubes of feta cheese and mix. Sometimes on very lazy Salady days I'll add in baby new potatoes and some shredded cooked chicken or smoked mackerel, a simple honey/mustard vinaigrette and it becomes a complete meal in a bowl.
I love the ease of it, a bit of chopping and tossing of ingredients with a homemade dressing and plenty of seasoning and voila! The best fast food.
Hello Lucy, my name is Amanda and I've been following your blog for a few months now, and I love it to bits. You may find it strange that I'm commenting on an 18 month old entry, but bear with me and I'll explain! As with many other followers, I was very happy to see a new post from you today! I read it, and clicked on the link to your Christmas tree needle trauma story because I wasn't following you back then and I was curious. I read that post and was interested in the photo mosiacs you promised for the next post so I read that one too. And there, in the June 08 mosaic was a lovely picture of a very tasty looking salad! The very one I'm commenting on now :) That one photo made me want that salad for lunch so bad that I went out to get the ingredients for it, and discovered a farmers' market that I've never been to before and am absolutely thrilled with! So now, I'm sitting here eating a recreation of the salad above, and poking around more of your wonderful blog. Tomorrow night I think we'll have butternut squash risotto :) You're an inspiration, even from the past! :D

I also love this kind of meal. A glass of chilled wine some crusty bread and a HUGE chunk of cake for afters!

That looks rather yummy, the last couple of days I've been fancying salad more than I usually do so I will be trying that one out. That sale you went to sounds fab, you were very good at controlling yourself! Your bargains were lovely....Claire xx
